Recipes: Falling for Fall with Sweet and Warm Flavors

Creamy Fall Vegetable Soup

  • 2 cups peeled, cubed butternut squash
  • 2 large sweet potato, peeled and cubed
  • 3 medium carrots, peeled and sliced
  • 1 large chopped shallot bulb (or small white onion)
  • 4 garlic cloves, peeled and pressed 
  • 2 cups vegetable broth
  • ½-1 cup of your favorite milk (whole, almond, coconut..)
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper


  • Preheat oven to 400 F and line a rimmed baking sheet with parchment paper. Place the squash, sweet potato and carrots along with onions and garlic on a baking sheet and drizzle with olive oil and toss to lightly coat veggies. Sprinkle with salt and pepper. 
  • Bake for 20 minutes or until tender.
  • Cool slightly. Transfer to a blender or food processor; add vegetable broth. Cover and process until smooth.
  • Transfer to a large saucepan; stir in the milk (slow to build the consistency of your liking), taste and correct seasoning as needed (you can always add more vegetable stock if needed). Cook and stir over low heat until heated through but not boiling.

Cinnamon Apple Crumble Pie

Pie Filling:

  • 1 (9 inch) frozen (or homemade) pie crust 
  • 6 cups thinly peeled, cored and sliced apples (Granny Smith or McIntosh Apples – preferably organic)
  • 1 tablespoon lemon juice (optional)
  • 3/4 cup brown sugar
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg


  • 1/2 cup all-purpose flour
  • 1/2 cup packed brown sugar
  • 3 tablespoons unsalted butter


    1. Preheat oven to 375 degrees F.
    2. Peel your apples and place them in a large bowl; add some lemon juice, if desired. In a separate bowl, mix together brown sugar, 2 tablespoons flour, cinnamon, and nutmeg. Sprinkle mixture over apples and toss until apple slices are evenly coated. Transfer mixture into pastry shell.
    3. In a small bowl ,mix together 1/2 cup flour and brown sugar. Cut in butter or margarine until mixture is crumbly. Sprinkle mixture over apple filling. Cover top loosely with unbleached baking sheet and then aluminum foil.
    4. Bake in preheated oven for 25 minutes. Remove cover and bake an additional 20 minutes, until the top is golden brown and the filling is bubbly. Cool on a wire rack and enjoy!
      Optional: Warm up the pie before serving and add a scoop of vanilla ice cream or your favorite frozen yogurt to enjoy this decadent treat.
