We love one-pot meals because they are so easy and simple. One pot means easy clean up, which is a home run in every kitchen. 🙂

It’s not easy to find recipes for veggie-one-pots since most rely on meat as a base. So we decided to feature delicious recipe ideas for one-pot meals to get us all eating more veggies.

Don’t worry, these recipes won’t leave you with a pot of soggy veggies.

And you can think “out of the pot” and use one sheet pan, or one skillet, or one Dutch oven.

Here are three one-pot-veggie meal ideas that are sure to keep you dancing in the kitchen.
